What it is
The white bloom on the casing is a deliberately introduced mould, Penicillium, not a fault — it keeps unwanted moulds off and regulates drying. Lyon and the Ardèche each claim to make the best, and neither will concede.
In the kitchen
Peel the casing only on the piece you are cutting. Stripped entirely, the whole sausage dries out within a day.
