What it is
Whole cane juice boiled down and left to set in a block, then scraped — rapar means to scrape. It is called panela in Colombia, piloncillo in Mexico, jaggery in India: the same product with five names and no refining at any point.
In the kitchen
It does not dissolve like white sugar. Melt it in a little hot liquid first, or you get gritty pockets.
