What it is
For centuries it sold as caciocavallo ragusano, named for the way the blocks were hung in pairs a cavaddu, astride a beam. Taking its DOP in 1996 meant dropping the word caciocavallo, so a cheese traded since the fourteenth century changed its name in order to keep its origin.
In the kitchen
Buy it aged past a year and grate it; young, it stays elastic and goes rubbery in the pan. Its grassy bitterness wants sweetness against it — long-cooked tomato, or roast onion.
