What it is
Domfront, France's only perry appellation, is made only from perry pears too astringent to eat, and Plant de Blanc must make up at least 40% of every blend. The trees are high-stem only, at most 150 to the hectare; they grow 10 to 15 metres tall and can take over fifteen years to bear. The grated pulp is left to macerate before pressing, which fixes the pears' phenolic compounds in the pulp so that less deposit forms in the bottle.
In the kitchen
Use it where you would use a sweet white wine: poach pears in it, or deglaze scallops or chicken and finish with cream. Open it like any sparkling wine, since it holds at least 1.4 bar of pressure.
