What it is
Every French château had a colombier, and the right to keep one was a feudal privilege abolished in 1789 — the birds ate the peasants' grain and only the lord could own them. Its breast is dark because pigeons actually fly.
In the kitchen
Serve the breast pink, closer to duck than chicken. Cooked through it turns liverish and grey.
