What it is
It is grown on purpose on molasses, then killed with heat and dried — unlike brewer's yeast, which is what is left over after beer. The B12 on the label is always added: yeasts cannot make that vitamin, and unfortified flakes contain none.
In the kitchen
Toast the flakes dry in a pan for a minute before using them and the nutty note doubles. A tablespoon whisked into a béchamel off the heat gives a cheese-sauce backbone without cheese.
