What it is
The black seam through the middle is a scar. Jura farmers with too little milk for a full Comté wheel saved the morning curd, covered it with soot from the cauldron to keep it clean, and added the evening curd on top. The ash is vegetable dye now, but the line is kept.
In the kitchen
It melts kindly and is far cheaper than Comté for a gratin. Keep the line horizontal when you slice or the wedge falls apart.
