Méthylcellulose F50

What it is

Despite the shared shelf, F50 is not a weaker A4M but a different molecule: hydroxypropyl groups sit alongside the methyl ones, which pushes the gel point up to roughly 62-68 °C. The 50 is again a viscosity reading, and it is the low one — thin enough in solution to whip, which is exactly what it is bought for.

In the kitchen

Whisk 1 % into cold liquid, chill it for a few hours, then whip it like cream: it takes air at fridge temperature and holds a piped shape without gelatine or egg. Warmed past 62 °C the same foam sets rigid, which is how a hot air survives the trip to the plate.
