What it is
Maury's Grenache grows on a band of black schist in the Agly valley, under the ruined Cathar fortress of Quéribus — rock that holds heat and almost no water. Most of it is bottled young in the grenat style, sealed against air, so where Banyuls goes nutty Maury stays black-fruited and tight.
In the kitchen
Grenat is reductive: unlike an oxidative fortified wine it does spoil once opened, so refrigerate and use it within a week. Reduce it with game stock and black pepper rather than with chocolate — the fruit is the point.
