What it is
The macadamia is the only Australian native to have become a global commercial crop, and most of the world's orchards descend from seed carried to Hawaii in the 1880s. Close to 80% of its fat is monounsaturated, which is why it holds a pan where walnut oil would turn bitter.
In the kitchen
It holds to about 200 °C and will take a gentle sear, but treat it as a seasoning: a spoonful over the fish at the end does more than a panful under it.
