What it is

Korean perilla is a different variety from Japanese shiso - a broader, softer leaf, closer to mint and anise than to shiso's sharper scent. Stacked one leaf at a time with soy, chilli and garlic laid between them, the pile slumps into a single supple block that is peeled apart leaf by leaf at the table.

In the kitchen

Pour the seasoning over the stack hot: cold liquid never gets past the top few leaves and the bottom of the jar stays raw. Weight the pile so it stays under the surface.
