What it is
Vinegar only forms on something already alcoholic, so this one begins as mead: yeast first, acetobacter second, two fermentations where wine vinegar needs one. The detour costs it bite — most bottles sit near 5% acidity against a wine vinegar's 7.
In the kitchen
Deglaze a roast chicken pan with it and mount with cold butter — it needs no sugar added, where a wine vinegar would. One part vinegar to three of pan juices.
