What it is
It reached English gardens from Germany in the eighteenth century and then quietly left them, while Poland kept it as a fixed member of włoszczyzna, the bundle of soup roots sold tied together in every market. The leaves are ordinary parsley; the plant simply puts its year into the root instead.
In the kitchen
Cook it in milk or in a lemony court-bouillon; it browns fast in a pan and the burnt note is not pleasant. Add its own leaves at the end — they are parsley, and they put back the green the cooking takes out.
