What it is
It is not one salt but two fused into a double salt, calcium bound to both lactic and gluconic acid, made because plain calcium lactate reaches its solubility limit and throws a chalky grit long before a spherification base carries enough calcium. The gluconate half keeps it dissolved in cream, in acidic fruit purée and in spirits, where the lactate alone clouds.
In the kitchen
Weigh 1.5 to 2 % into the base, blend, and rest it until every bubble has risen — trapped air floats a sphere and sets it flat on one side. Past about 3 % the mouth turns chalky, and the answer is a longer bath, not more salt.
