What it is
In medieval England a pound of ginger cost a sheep, and Queen Elizabeth I is credited with the first gingerbread men, baked as portraits of her courtiers. A root that has been currency, medicine and flattery.
In the kitchen
Peel it with the edge of a teaspoon — it follows the knots better than any knife. Frozen, it grates like a dream.
