What it is
Napoleon's continental blockade made cocoa scarce in Turin, so the city's chocolatiers stretched it with Piedmont hazelnuts; the paste was handed out at the Carnival of 1865 by the masked character Gianduja and took his name. Up to thirty percent of it is nut oil, which drops its melting point close to body temperature.
In the kitchen
It will not temper like a couverture - the hazelnut oil keeps it soft. Set it in a frame at 16-18C, and if it has to hold a clean edge, cut it with twenty to thirty percent dark couverture.
