What it is
Fresh curd drained but never aged, never salted, never ripened — a cheese caught at the first hour of its life. In its loosest form, faisselle, it is sold still dripping in the perforated pot it drained in, and eaten with nothing but sugar or a little cream.
In the kitchen
Whip it with a fork before serving and it lightens completely. Sweet with honey, savoury with shallot and herbs — it goes either way.
