What it is

The third stomach is a stack of hundreds of thin leaves, which is why anatomists called it the psalterium — the psalter, a book. It is the one tripe cooked for crunch instead of melt: Chongqing hotpot even has a rule for its maodu, qi shang ba xia, seven dips up and eight down, which comes to about eight seconds.

In the kitchen

Eight to ten seconds in boiling broth, then out. Past a minute it turns tough and needs two hours to come back — there is no useful middle ground.
