What it is

Every chicken descends from a shy jungle bird of Southeast Asia. Henri IV of France wished “a chicken in every peasant’s pot, every Sunday” — the poule au pot became a political promise, and the bird the most eaten meat on the planet.

In the kitchen

Salt it the night before and let it dry uncovered in the fridge: the skin will roast to glass. The carcass owes you a stock — collect the debt.
