What it is
The Adriatic sturgeon was fished out of the Po and its tributaries and is now listed as critically endangered in the wild, so every grain sold comes from farms that also raise fingerlings for restocking the river. Its roe carries an almond-milk sweetness no other species gives, which is the only reason the fish had a commercial future at all.
In the kitchen
Serve at 8–10 °C on the back of the hand or a nacre spoon; metal turns the almond note metallic within seconds. Keep lemon away from it — the acid erases exactly the sweetness you paid for.
