What it is
Beware the word: in France cassonade means unrefined cane sugar, in Belgium and Quebec it means something closer to soft brown sugar made from beet. Recipes crossing those borders go wrong on this single term more than any other.
In the kitchen
It is what goes on a crème brûlée because it caramelises faster than white sugar and colours more evenly.
