What it is
It grows hanging beneath a fleshy false fruit, and its shell contains a caustic oil related to poison ivy — which is why cashews are never sold in the shell and why shelling them by hand is genuinely hazardous work.
In the kitchen
Soaked and blended it makes a cream that behaves like dairy. It is the base of half the vegan sauces that actually work.
