What it is
Brumale means of winter, and it shares the black truffle's season, its soils and often its own plantation — which is the problem, since it colonises melanosporum ground and leaves with the crop. The cut face gives it away: broad white veins, widely spaced, where melanosporum runs fine and dense.
In the kitchen
Its musk turns harsh under long heat, so keep it out of the roasting tin: chop it fine into a farce or a butter, and use a third of what you would use of melanosporum.
