What it is
Homer describes it in the Odyssey — a stomach filled with fat and blood, roasted on a fire — which makes it one of the oldest recorded prepared foods in Europe. Every region of France has a version, and they argue about apples.
In the kitchen
Cook it gently and never pierce the skin. High heat splits the casing and the whole thing empties into the pan.
