What it is
Mullet roe salted, pressed and air-dried into an amber ingot — a technique the Phoenicians carried across the Mediterranean three thousand years ago. Sardinia grates its “Mediterranean caviar” over pasta; Martigues, near Marseille, guards its own as le caviar provençal.
In the kitchen
Shave it paper-thin or grate it at the very end, never cooked. With lemon, olive oil and raw celery, it needs exactly nothing else.
