What it is
Georgians call it utskho suneli, the foreign spice, although it has grown in the Caucasus for centuries, and it is the blue in khmeli suneli. In Glarus the same herb is ground whole — pods included, which is why it is milder than common fenugreek — into Schabziger, the hard green cheese Swiss records mention as early as the fifteenth century.
In the kitchen
Add it at the end of cooking, off the heat, the way you would a dried herb — sustained heat strips the hay-and-maple aroma out of it within minutes. Do not swap it weight for weight with common fenugreek: the ordinary seed is far more bitter, and half the quantity is already too much.
