What it is
Made from Banyuls, a fortified sweet wine from the terraced vineyards above the Mediterranean, and aged in oak barrels left outdoors through the seasons. The result is closer to sherry vinegar than to any French one.
In the kitchen
Its sweetness lets it stand alone — a spoonful on a warm salad of duck or foie gras needs no oil at all.
