What it is
From the same plant that makes tequila — the heart of the agave is cut out and its sap boiled down. Marketed for years as a low-glycaemic alternative, though it is largely fructose, which is a rather different claim than most labels imply.
In the kitchen
It is sweeter than sugar, so use about three quarters as much, and reduce the other liquid slightly.
